  For Thai Chicken Cashew Nut Salad you can just stir fry chicken or grill the chicken and chop it up, but flour coated fried chicken gives a yummy crunch in your salad. I like it, hope you will like too. And like the spicy kick in my Chicken Cashew Nut Salad, so I use whole thai chillies but if you want less hot, you can deseeded it. And last not the least dressing depends on your taste buds, so you can use more or less ingredient to suit your bud. Have you planned anything for Eid desserts yet? If you want to go with Bangladeshi Tradition, you can try Nokshi Pitha / Crispy Rice Cake. Syrupy and crispy fried Rice cake/ Nokshi Pitha made with rice flour, Date Jaggery(gur) syrup and oil. Traditionally in Bangladesh, the thorns of Date tree are used to make the intricate designs, though I am using toothpick instead of thorns. The beauty of the Pitha will make you speechless. Another plus point is its long shelf life. So you can sundry it for 2-3 day and put into airtight container till you want to fry them. Usually for wedding ceremonies and other festivals (Special Eid) the women of rural area made this pitha month ahead. So enjoy this yummy crispy Pitha(cake).   I gave Doi recipe before which is very handy but not traditional way. So I am sharing this recipe  to make Bangladeshi Tradition Yogurt / Misti Doi / দই(দধি) in traditional way. If you don’t have or don’t want to go the hassle of boiling milk, you can use evaporated milk. Hope you will make and enjoy with your loved one in this summer. With Love, Rownak Ingredients: 1 litre milk Sugar to taste 3 tablespoon yogurt(natural/ Greek ) 3-4 tablespoon sugar (for caramel) How to make: In a pan add sugar for caramel and heat it. Cook it till it becomes golden caramel (do nt over burn it, then it will bitter taste). Add milk in caramel and boil it till it becomes half in amount. Ramadan Mubarak. To make this beautiful simple dessert please keep in mind 3 key points- batter consistency, temperature of oil and temperature of syrup. If you make sure these key points, you will get perfect Boondia / Boondi / বুন্দিয়া. Using colour is totally up to your choice, though I keep it traditional using bit of red colour. Some of us love to add baking powder, I dont find any need for that. Enjoy. With regards, Rownak Ingredients: 1 and ½ cup gram flour(Besan) 1 and ½ teaspoon oil 1 cup of water Food colour(to your choice) Oil to deep fry   For syrup 1 and half cup sugar 1 cup water 2 cardamom pods Also needs perforated ladle or flat skimmer. Grated Mango Pickle / Kacha Amer Jhuri Achar / ঝুরি আমের আচার

  You will need firm raw mango for this pickle. Ingredients: 5-6 raw mangoes 2 tsp mustard paste 1 tsp ginger paste 1tsp chopped garlic ¼ tsp fenugreek seeds(methi) ¼ tsp Fennel seeds(mouri) ¼ tsp black cumin seeds (kalijeera) 2 dry red chillies 1 tsp mustard paste ½ tbsp chopped ginger mustard oil ½ cup vinegar 1 tbs sugar Salt to taste   Ingredients: Peel the skin of the mangoes and grate it. Soak grated mango for 2hours and squeeze the water out. Dry roast fenugreek seeds, fennel seeds, black cumin seeds and dry chiilies; grind it. Now mix all ingredients together and put this pickle mixture in a sterilized glass jar.
