Sweet and sour mango pickle / Amer Tok Misti Achar / আমের টক মিষ্টি আচার

  You can make this pickle with or without skin mango which is totally up to you. I made this one with skin. Sugar and chilli can be added to your taste. With love, Rownak Ingredients: 1 kg Raw mango 2 ½ cups sugar/ Gur(or to taste) 1 tsp turmeric powder 1 tsp fenugreek seeds(methi) 1 tsp Fennel seeds(mouri) 1tsp black cumin seeds (kalijeera) 1 tsp chilli powder 1 tbsp mustard paste ½ tbsp chopped garlic ½ tbsp chopped ginger 1 cup mustard oil 1 cup vinegar Salt to taste How to make: Cut mango and remove the seed. Cut into small pieces with skin or without skin, wash and soak into salt water for hour. Strain and mix chilli powder and 2 tablespoon salt and dry under sun at least 4 hours. Roast all seeds separately and grind them. Heat the pan with oil and add garlic, mustard paste, ginger paste, rest of spices and vinegar. When it cooperates together, add mango pieces. We used to call Rosogolla as Sada misti which means white sweet and gaint sada misti used to call Rosogolla (I even had Tennis ball size Rosogolla which is impossible to find now). I gave Rosogolla recipe before which makes perfect rosogolla. But this rosogolla is with less ingredients . So please check my childhood favourite Rosogolla / Sada Misti / Sweet Cheese Ball. N.B. if you want, you add cardamom powder with chana.   Garlic pickle / Am Rosuner Achar / আম রসুনের আচার  has health benefits, as we all know that Garlic has been used as a food and medicine for long. Traditionally garlic pickle is made with solo garlic (এককোয়া রসুন) (sorry I could not find solo garlic so I used normal garlic).In this pickle I used mango along with garlic, but you can use olive, elephant apple(চালতা),tamarind or your favourite pickle fruit. Green mango Juice / Kacha Amer Shorbot / কাঁচা আমের শরবত

  Green mango juice is a typical Summer delight juice in the Bengal, however each person makes it differently. Some likes to roast mango and some likes to boil it; some likes add green chillies and some likes to add black pepper. Some even likes to use half ripe mango. In this preparation sugar depends on sourness of your mango and your taste bud, so use it as less or as much you needed. Personally I like to roast green mangoes to get perfect smoky flavour but if you want to make life easy and handy, you can peel mango, cut the flesh and boil it with water till it becomes soft. Homemade Potato Chips / হোমমেইড পটেটো চিপস

    I did not have plan to make it as a post, so I did not take raw potato slices photo. As usual I tried to do use few ingredients and easiest process, these chips tastes great. But if you want Salt vinegar flavour : add 2 tablespoons vinegar in the water your soaking potato slices. Tomato flavour: add 2 tablespoons tomato sauce in the water your soaking potato slices. Chicken flavour: add 2 chicken stock cubes in the water your soaking potato slices. You can use chicken salt and any other readymade chip spice. Tasting salt is vastly used in chip, but I did not use it. If you want to add tasting salt, it’s up to you.
