Chingri Bora / Prawn Fritter By Rownak Jahan, March 12, 2012 Prep Time: 15 minutes Cook time: 25 minutes Yield: 12-14 Long time I haven’t posted anything. Sorry for my silence  and hopefully I will be regular from now. In this recipe I use fresh grated coconut. Instead of fresh grated coconut you can use 2 tablespoons desiccated coconut soaked in 1 tablespoon coconut milk/milk. Ingredients: • 150 gram prawns • 2 tablespoons red lentil • 3 tablespoon grated coconut • 1 medium onion sliced • 4 green chillies chopped • ¼ teaspoon turmeric powder • 2 tablespoon coriander leaves chopped • Salt to taste • Oil for deep fry     How to make: 1. Soak lentil about ½ hour in water and drain water thoroughly. 2. Make paste of lentil, coconut and prawn and mix rest of things with it. 3. Heat the pan with oil. When oil is ready add make flat fritter and put on oil carefully (you can use spoon and don’t squeeze the mix).

Forgive me for not being regular last few days. I am visiting Bangladesh after 5 years. So I deserve this break. I am giving Special Naru / Special Coconut laddoo. It is Naru stuffed kheer ball inside. You can omit the kheer ball part. Then it will be plain sugar naru. Even you can big naru and put 2-3 kheer balls inside. Ingredients: • 1 cup grated coconut • ¾ cup sugar • ¼ cup kheer/ rabri • 1 teaspoon semolina • ¼ teaspoon cardamom powder • 1 tablespoon clarified butter/ghee How to make: 1. Fry semolina in ½ teaspoon clarified butter/ ghee and mix with kheer / rabri. 2. Make small balls with it and fry it with clarified butter/ ghee till it becomes golden brown. 3. Heat the pan on medium high and add grated coconut, cardamom and sugar. 4. Cook it till oil comes out.( need to stir constantly) 5. Remove from heat and let it cool down slightly. 6. Kofta and Meat Ball are actually same thing, just use of different spices. Kofta / spicy meat ball is very easy and handy recipe. Hope you will find interesting too. You can use mince  but I like to make make it. Ingredients: • 400 grams diced beef/mutton • 1 medium onion • 1 slice white bread • 4 green chillies • ½ teaspoon crusted black pepper • ½ teaspoon nutmeg powder • 1 tablespoon chopped fresh ginger • 1 tablespoon chopped fresh coriander leaves • Salt to taste • Oil for deep fry Also needs food processor. Brain Cutlet By Rownak Jahan, January 24, 2012Prep Time: 15 minutes Cook time: 10 minutes Yield: 8-10 Ingredients: • 225 grams lamb/ goat/beef brain • ¼  cup onion thinly sliced • 1 white bread slice • 1 tablespoon coriander leaves • 3 green chillies • ¼ teaspoon crusted black pepper • ¼ teaspoon cinnamon powder • ¼ teaspoon cardamom powder • 1/2 teaspoon  kabab masala • 2 tablespoon cornflour • 3 tablespoon oil • Salt to taste How to make: 1. First boil 3 cups water and add the brain. Boil it about 2 minutes and take it out. 2. Chop the boiled brain and keep and keep aside. 3. Mix bread, coriander leaves, pepper, chat masala, all powder spices and salt in food processor. Give a quick Mix and add the chopped brain. 4. Make flat balls and roll in cornflour. it will make about 8-10. 5. Heat the pan with oil and fry the brain ball in slow heat till it becomes golden brown. 6. Serve brain cutlet

All, I find, are vegetable spring roll. Vegetable roll is the most selling fast food in Bangladesh. Bangladesh vegetable roll is vegetables stuffed crepe which rolls in breadcrumb. I use carrot, cabbage and bean for this. But you can use your choice vegetables. It goes really well in kid’s lunch box even for those kids who don’t like vegetables. It is very easy and handy. Only tricky part is not to make smooth lentil paste, make it coarse. Ingredients: • 1 cup red lentil • 1 large onion sliced • 3 green chilli chopped • 1 tablespoon rice flour/ semolina • 1/6 teaspoon turmeric powder • 1 tablespoon chopped coriander leaves(optional) • ¼ teaspoon black salt(optional) • Salt to taste • Oil for deep fry   How to make: 1. Soak the lentil 20-30 minutes and drain with enough water thoroughly. 2. Make coarse paste and mix with rice flour, onion, chilli, turmeric, coriander and salt. 3. Mix lightly. 4. But if you want to dip in egg and roll on bread crumb, you can do it. I use cauliflower, broccoli, bean and corn here. Habanero chilli (bombai morich) can be used it this cutlet. Ingredients: • 1 cup diced potato • 2 cups choice vegetables(broccoli, cauliflower, carrot, peas,bean, green pawpaw etc) • 1 and ½ sliced onion • 3-4 green chilli • 2 tablespoon cornflour • Salt to taste • Oil for deep fry     How to make: 1. Pumpkin flower is available for me because I have pumpkin plant. Pumpkin plant is very easy to grow. Try once. I promise that you will love the result. You can add gram flour(besan) in the batter to make thick coating. Thanks. Ingredients: • 10-12 pumpkin flowers • 1 tablespoon sliced onion • ½ teaspoon chopped green chilli • 1 egg • 1/6 teaspoon chat masala • 1/8 teaspoon chilli powder(optional) • Salt to taste • Oil for dry fry     How to make: 1. We will take only Pumpkin flower’s petal. So remove rest of part. 2. Stuff onion and green chilli inside the flower and fold the petal (check the photo). 3. Make batter to mix egg, chat masala, chilli powder and salt. 4. Heat the pan with oil on medium. When oil is ready, deep the flower in egg batter add place in oil. 5. Mughlai paratha is deep fried egg, spiced mince stuffed bread. You can even make without mince. I use here puff pastry sheets for bread. I find it handy. But it can make with scratch. Just knead the dough thoroughly and roll it in square shape. Ingredients: • 2 puff pastry sheets • 100 grams beef/mutton mince • Spices for mince (Garlic paste, ginger paste, black pepper powder, chilli powder, garam masala powder and salt) • 3 eggs • 1medium sliced onion • 2-3 chopped green chillies • 1 tablespoon chopped coriander leaves • Salt to taste • Oil for fry         How to make: 1. Fry the mince with pinch of all spices and keep aside 2. Mix salt with onion sliced properly. Then add chilli, coriander leaves and eggs and give a whisk. 3. Heat the pan on medium. I like to use oil to deep the sheet half way through. 4. Take a puff pastry sheet and top up ½ egg mix and ½ spiced
