Green mango Juice / Kacha Amer Shorbot / কাঁচা আমের শরবত

  Green mango juice is a typical Summer delight juice in the Bengal, however each person makes it differently. Some likes to roast mango and some likes to boil it; some likes add green chillies and some likes to add black pepper. Some even likes to use half ripe mango. In this preparation sugar depends on sourness of your mango and your taste bud, so use it as less or as much you needed. Personally I like to roast green mangoes to get perfect smoky flavour but if you want to make life easy and handy, you can peel mango, cut the flesh and boil it with water till it becomes soft.   Falooda/faluda is a cold and sweet beverage for summer and great for Iftar. Falooda is very refreshing. Traditionally it is made with lots ingredients; here I try to make it simple and easy for home made version to keep it original flavour. You can use or add fruit by your choice, just pick sweet one. Rose essence goes well this recipe, though you can Rooh Afza which will give flavour and colour together. If you don’t have any of these just boil milk with 1 cardamom pod.  Thanks. Ingredients: 1 litre milk 1 cup milk to soak topica ½ cup seed tapioca/ tapioca pearls/ sago ¾ cup sugar or to taste 60 gram noodles 2 tables tokhma Fruit (banana. Cherry, grapes, apple or your choice thinly sliced) 4-5 scoops ice cream Rose essence(optional) Food colour(optional)     How to make: Soak seed tapioca in milk at least 15 minutes. Soak tokma in 1 cup water. Boil the milk till it becomes half. Cook milk till seed tapioca becomes tender

  Ramadan Mubarak. In Holy month of Ramadan I feel that it is best to have as much water and beverages as possible, otherwise there is a huge risk of dehydration. That’s why I want to share my choice of Beverage for Iftar which very tradition Bangladeshi Beverage (literally I have grown up to make these for my dad). Psyllium Seed husk Juice / Isobgoler Shorbot Psyllium seed husks are indigestible and are a source of soluble dietary fibre for relief constipation and irritable bowel syndrome. Psyllium husk can improve lipid control in Type 2 diabetes. Psyllium husks usually need to soak in water for a minimum of 30- 60 minutes before consumption. If you don’t like the sliminess, soak it just before consumption. Psyllium seed husk(isobgol) is available any supermarket health food section or organic super market.

In Ramadan it is good to have lots of water, fruit juice or beverage. But we love to have oily fried stuffs. That’s why we need to make our beverage interesting and tasty.  Lassi / smoothie is an easy simple tasty but healthy recipe. You  can make lassi/ smoothie with mango / banana or with your favorite fruit. I gave 2 different recipe one bengali and one in English, reason for that Misti doi (sweet yogurt) is not available in abroad, but typically lassi is made with sweet yogurt. So english version I used greek yogurt and Bengali version I used sweet yogurt . With love, Rownak N.B. Some of us love to add pinch of salt in it specially black salt (bit lobon) Ingredients: • 2 cup diced ripe mango or mango pulp / banana • 2 cup milk • 1 cup Greek yogurt • sugar to taste • 2 drops of rose water (optional) How to make: Blend all things together and make it smooth. Jeerar Sharbot / Cumin Juice

  Jeerar Sharbot / Cumin Juice is a very healthy juice. Some of us even call tamarind Sharbot / Tamarind juice. As you know, we have lots of oily fried stuffs in Ramadan. This juice is good for digestion. Though this recipe is taste as you go, I tried to go a measurement. Hope you will enjoy. Ingredients: • 4 cups water • 3 tablespoon tamarind • 6 tablespoon sugar / palm sugar • 1 tablespoon roasted cumin powder • 2 teaspoon black salt How to make: 1. Soak the tamarind in 1 cup water at least 1 hour. 2. Strain it and take tamarind water. 3. Mix all ingredients with tamarind water and mix well. 4. Let it sits in refrigerator about ½ hour and serve chilled Cumin Sharbot/ Cumin Juice.

Ingredients: • 2 cups Greek yogurt • 3 cups cold water • 1 tablespoon chopped mint • ½ tablespoon chopped coriander leaves • 1 teaspoon fried cumin powder • 1 teaspoon black pepper powder • 2 green chillies • 2 tablespoon sugar(or more) • ¼ teaspoon mustard powder(optional) • ½ teaspoon black salt • Salt to taste Also needs blender.     How to make: 1. Place all ingredients in the blender and blend well. 2. Check the salt and sugar. 3. Serve Borhani chilled.

Traditionally it is made with lots ingredients; here I try to make it simple to keep it original flavour. If you like, you can use basil seeds. First need to soak basil seeds, drain it and add with it. Ingredients: • 1 and ½ cup milk • 2 tablespoon seed tapioca/ tapioca pearls/ sago • 3 tablespoon sugar • 1/8 teaspoon cardamom powder • ¼ banana thinly sliced • 1 cherry sliced • 6-8 grapes cut from centre • ¼ apple thinly sliced • 2 scoops ice cream(mango flavour) • 1 tablespoon honey     How to make: 1. Soak seed tapioca in milk at least 15 minutes. 2. Cook milkwith cardamom powder till seed tapioca becomes tender and add sugar. 3. When sugar dissolves, remove from heat and let it cool down. Put it into refrigerator. 4.
