Luchi By Rownak Jahan, January 21, 2012 Prep Time: 10 minutes Cook time: 20 minutes Yield: Make: 10-11 Luchi is deep fried flat bread which is made by flour, ghee/ oil and salt. Ingredients: • 1 and ½ cup flour • 3 tablespoon ghee/ oil • Salt • Oil for deep fry How to make: 1. Dissolve the salt in water and mix flour and purified butter. Then add salt water. 2. Make smooth, soft but pliable dough and keep aside 10 minutes.( I like food to use processor for kneading) 3. Heat the pan with oil and divide dough into 10-11 balls. 4. Roll each ball, don’t make thin.(some of us likes to roll in loose flour but luchi dough has oil in it so it is easy to roll) 5. When oil is ready, place flat bread in oil and when it puffed up, turn it over. 6. After 30-45 second remove it from oil (keep it white) and repeat the process with rest of balls. 7. Serve

Aloo Paratha / Alu parata By Rownak Jahan, July 8, 2011 Prep Time: 20 minutes Cook time: 14 minutes Yield: 7 parathas   Ingredients: . 2 cups flour . Pinch of salt . 1 cup water (may be need more or less) Potato Stuffing: . 4 medium boiled potatoes . 1 small finely sliced onion . 1 teaspoon cumin powder . 2 finely sliced chilli . 2 tablespoons finely chopped coriander . Salt to taste . Butter or oil for fry Dough: 1.       Mix flour, salt and water to make soft dough (water may be need more or less for soft dough). You can use your hand or food processor to make the dough. 2.       Knead the dough for few minutes until it becomes smooth dough. 3.       Cover the though and let it sits for 10-15 minutes. Stuffing: 1.       Mash the potatoes. 2.       Mix with potato, onion, chilli, cumin powder, coriander and salt together.
