  As you know, I love cooking. But work, cooking, kid, hubby, family, friends etc I sometimes feel that enough is enough. Need a break, so I use a food delivery website called EatNow.com.au, where I can order Indian food online from a list of Indian takeaways from the comfort of my home.   Chicken rezala is not as Mutton rezala. Rezala is actually cooked with meat. As I told in my Rezala recipe, rezala is actually cooked with whole chillies (mostly fresh green chillies, though like to add dry chillies too). For green chillies it has unique fresh flavour. I used ghee/ clarified butter in this recipe for more flavour. If you want to make healthy, you can use oil. Ingredients: • 1 chicken • 1/3 cup Greek yogurt(tok doi) • ½ cup onion paste • 1” cinnamon stick • 2-3 cardamoms • 2 dry chillies (optional) • 4-5 green chillies • 1 bay leaf • 2 teaspoons ginger paste • 1 teaspoon garlic paste • 1 tablespoon poppy seed paste or Cashew nuts paste • 2 teaspoon coriander powder • ¼ teaspoon nutmeg powder • ½ teaspoon sugar • Salt to taste • 1/3 cup ghee/ clarified butter How to make: 1.   Chicken Cashew Nuts is Chinese dish. Chinese foods are very popular in Bangladesh. Thought I found, it has lots of difference with authentic Chinese cuisine. I like to call fusion food. In this dish you add your vegetables (mushroom, bean, bok choy, snow peas, broccoli, carrot etc). But from add vegetables, you need to be quick. Vegetables need to crisp (don’t overcook). Hope you guys had a wonderful Eid. About year ago I posted traditional way to cook chicken roast. But I get mixed impression for it. Some said about too many ingredients. Some said too length process. Some said its too old. So I think to make it the way to fit our modern (pardon I wanted to say abroad kitchen). So this roast will be in oven. You can marinate chicken with all spices and bake it for 1 hour to make it simpler. But I spent some time on it and took out it from oven twice to make it perfect. I used cream in this recipe, if you dont have cream, boil half litre milk and when it reduced to 300 ml , use it instead of cream. Hope you like my recipe and don’t forget to like facebook page.   Ingredients: • 500 gram chicken breast • 2 white bread slices • ½ cup onion sliced • 4-5 green chillies • 2 tablespoon cream • 2 tablespoon tomato sauce • 3 tablespoon coriander leaves chopped • 1 teaspoon ginger paste • 1 teaspoon roasted cumin powder • ½ teaspoon garam masala powder • ½ teaspoon white pepper powder • 1 teaspoon salt or to taste • Oil for shallow fry       How to make: 1. Take all ingredients in food processor and blend it. 2. Take a little mince mixture in your hand; squeeze it to give the shape. It will be long cylinder shape like picture. 3. Heat the oil on medium high and shallow fry it till it becomes golden brown. 4. Take out muthi kabab from oil and serve with your favourite sauce.

    In my house I do grilled chicken on busy day in Aussie style (just put chicken and grill it). But when I tried Bangladeshi style grilled chicken, my daughter said that we should do that more often. Trust me that she knows the taste very well. So enjoy the spicy Bangladeshi style grilled chicken. Ingredients: • 1 whole chicken(size 10 skin off) • 2 tablespoons papaw paste(pepe bata)/ meat tenderizer • 3 tablespoon yogurt • 2 teaspoon chilli powder • 1 teaspoon chat masala / chotpoti masala • 1 teaspoon coriander powder • 1 teaspoon ginger paste • 1 teaspoon garlic paste • ¼ teaspoon cardamom powder • ¼ teaspoon black pepper powder • ¾ teaspoon salt • 1 tablespoon butter/ oil     How to make: 1. Clean chicken and wash it and pat dry chicken well. 2. Marinate chicken with all ingredients except butter. Mix well inside and outside. 3. Let it marinate for at least 8 hrs but don’t do more than 36 hours. 4.

It is hard to find any occasion where polau, korma and kalia are not cooked. I have tried to simplify chicken korma for abroad kitchen. I use almond meal instead of poppy seeds. If you want, you can use white poppy seeds’ paste. Enjoy the flavour of chicken korma.   In my house chicken is not that popular. So I try to not cook regular chicken curry. Need something extra for chicken or something different. Chicken Dopiaza is a chicken curry with lots of onion and less gravy which makes this curry more taste.
