Sweet Carrot /Gajorer Halua

  Sweet Carrot /Gajorer Halua is a unique dessert. I use milk in this recipe but you can make without milk. Even you can boil the carrot and make paste from carrot for halua. But I feel that grated carrot is easy and healthy way. Ingredients: • 400 grams carrot grated • 2 cups milk • ¾ cup sugar • ½ cup cardamom powder • 1’’ cinnamon stick • 6-7 chopped almond / cashew nuts • 4 tablespoon clarified butter/ ghee How to make: 1. Fry grated carrot in clarified butter/ ghee about 2-3 minutes and keep aside. 2. In same pan add milk, cardamom, and cinnamon. 3. Cook milk till it becomes half in amount. 4. Add carrot and sugar. 5. Cook it till it starts to leave from the side of the pan and remove from heat. 6. Garnish with nuts and enjoy Sweet Carrot /Gajorer Halua.

Balushahi By Rownak Jahan, March 19, 2012Prep Time: 20 minutes Cook time: 25 minutes Yield: Make: 8-10 Ingredients: • 3oo grams short crust pastry dough • ½ cup mawa • ½ teaspoon nutmeg powder • 1 and ½ cup sugar • Oil for deep fry     How to make: 1. Heat the pan on medium and add sugar and ¾ cup of water. Cook it till sugar is dissolved and syrup comes into boiling point. Keep aside syrup. 2. Take dough and divide into 8-10 equal balls. Take each ball and use your finger to spread little. 3. Mix ¾ mawa and nutmeg powder and place spoonful of mawa mix on the spread dough. 4. Close the dough and make it flat. Press little bit in the middle. 5. Heat the oil on low heat and fry the stuffed flat bread till it becomes golden. Remove it from oil and soak it about 3-5 minutes into syrup. 6. Ladoo / Laddu By Rownak Jahan, March 18, 2012Prep Time: 10 minutes Cook time: 40 minutes Yield: Make:16-20 Ingredients: For syrup: • 3 cups sugar • 1 and 3/4 cups water For boondi: • 2 cups chickpeas flour(Besan) • 1 cup water • ¼ teaspoon saffron imitation • ½ teaspoon cardamom powder • Oil to fry • 2 tablespoon clarified butter(optional) Also needs perforated ladle/boondi ladle. How to make: 1. Heat the water and sugar in saucepan on medium high and bring a boil. When sugar is dissolved, turn off the heat. Syrup needs to be lukewarm. 2. Mix chickpeas flour with water and saffron to make smooth thick batter. 3. Heat oil for deep frying. Oil needs to more than 1’’ deep. Otherwise boondi will not be round. Oil needs to medium high. (To test the oil temperature) drop little bit of batter, if it rises immediately without changing colour that means oil is ready. 4. Hold the ladle on the top of hot water and pour ladleful batter.

Traditionally it is made with lots ingredients; here I try to make it simple to keep it original flavour. If you like, you can use basil seeds. First need to soak basil seeds, drain it and add with it. Ingredients: • 1 and ½ cup milk • 2 tablespoon seed tapioca/ tapioca pearls/ sago • 3 tablespoon sugar • 1/8 teaspoon cardamom powder • ¼ banana thinly sliced • 1 cherry sliced • 6-8 grapes cut from centre • ¼ apple thinly sliced • 2 scoops ice cream(mango flavour) • 1 tablespoon honey     How to make: 1. Forgive me for not being regular last few days. I am visiting Bangladesh after 5 years. So I deserve this break. I am giving Special Naru / Special Coconut laddoo. It is Naru stuffed kheer ball inside. You can omit the kheer ball part. Then it will be plain sugar naru. Even you can big naru and put 2-3 kheer balls inside. Ingredients: • 1 cup grated coconut • ¾ cup sugar • ¼ cup kheer/ rabri • 1 teaspoon semolina • ¼ teaspoon cardamom powder • 1 tablespoon clarified butter/ghee How to make: 1. Fry semolina in ½ teaspoon clarified butter/ ghee and mix with kheer / rabri. 2. Make small balls with it and fry it with clarified butter/ ghee till it becomes golden brown. 3. Ingredients: • 1 litre milk • 2 tablespoon vinegar • ¼ teaspoon cardamom powder • 1 cup sugar Also needs strainer/ cheese cloth and baking paper.       How to make: 1. Make chhana/ homemade cheese to follow my recipe. 2. Heat the pan with sugar and 1/3 cup water. 3. When sugar melts and becomes 2 thread consistency, add chhana/ homemade cheese and cardamom powder. 4. Stir it and keep it crumbly. 5. When it cooperates well, remove from heat. 6. Put like small portions on the baking paper by using spoon and let these cool down. 7. When there cool down, take 2 of them and press little bit. It will stick together. Repeat the process with rest of them. 8. Enjoy sondesh and make your life sweet.

Thanks to Shahnaz Quayyum for sharing wonderful recipe. Though I try to keep my touch. Ingredients: • 1 litre milk • 2 tablespoon vinger • ¼ teaspoon cardamom powder • 1 cup sugar • ¼ cup icing sugar Also needs strainer/ cheese cloth         How to make:   1. Make chhana/ homemade cheese to follow my recipe. 2. Add cardamom with cheese and knead it well. 3. Shape it like the picture and let it sets in refrigerator for ½ hour. 4. Add sugar and 1/3 cup water on stove and make it two thread sugar syrup.  The syrup thickens and becomes sticky. 5. When white bubbles start to show from bottom,Take out the cheese from refrigerator and cut into small cube and add cheese in syrup and cook for 2 minutes. 6. Lal mohon/Golap jam/lal misti which ever name you call it, all are different name for same dessert. Hope you will like.   Image Credit: bnilesh   Ingredients: • 2 cups full cream milk powder • ½ cup self raising flour • Pinch of saffron imitation • 200ml thicken cream • 3 cups sugar • 2 cardamom pods • Ghee or Oil to deep fry(you can use half oil and half ghee) How to make: 1. First place a sauce pan on heat with 3 cups water, cardamom and sugar. When sugar is dissolved and syrup comes into boiling point, turn off the heat. Keep aside. We need lukewarm syrup to soak the sweet. 2. Mix milk powder, self raising flour, saffron and cream and make dough. Need to be careful about adding cream because we want soft dough which we can work with (don’t make too soft which hard to shape). But on the other hand hard dough will make crack on sweet. 3. Divide the dough into 18-20 balls.

There are two versions of  Jorda / Zarda, one is pineapple and another one is orange. So in orange Jorda / orange Zarda orange zest, orange juice(optional) and pulp are used . And for pineapple jorda / pineapple Zarda   diced pineapple and pineapple juice(optional) are used. I am giving here basic recipe , with that you can make your desire Jorda / Zarda / Sweet rice.
