Though making Lachcha Semai at home is not hard, can be little bit tricky for 1st time but trust me not hard.   What should I say? Beef Chop In Bangladeshi Style/ গরুর চাপ  is a simple recipe, just need bit of patience to let marinate the meat for enough time. You can marinate the meat up to 2days in your refrigerator. So you can prepare the meat and just fry whenever you want to have.   I like to cook it in mustard oil, but you can use vegetable oil and brush with ghee too for more flavour. Just remember to flatten meat to quarter inch which will make meat more tender, easy to marinate and easy to cook.   Bird’s nests is so crunchy and just the right sweetness. This Bite sized nutty dessert is popular Middle Easter dessert specially during the holy month of Ramadan and Eid. Any kind of Kunafa is made of Kataifi and Kataifi is a very fine vermicelli-like pastry (close to Bangladeshi moist and pliable Semai). I know that Kataifi is not available in Bangladesh. So I thought how to make our Semai (vermicelli) pliable(Because we need to roll Vermicelli to give shape of bird’s nest). So I soaked it for 10 minutes in water which made easy my work J . If you have Kataifi, use kataifi otherwise our very own Semai (vermicelli) will do the magic.   For Thai Chicken Cashew Nut Salad you can just stir fry chicken or grill the chicken and chop it up, but flour coated fried chicken gives a yummy crunch in your salad. I like it, hope you will like too. And like the spicy kick in my Chicken Cashew Nut Salad, so I use whole thai chillies but if you want less hot, you can deseeded it. Have you planned anything for Eid desserts yet? If you want to go with Bangladeshi Tradition, you can try Nokshi Pitha / Crispy Rice Cake. Syrupy and crispy fried Rice cake/ Nokshi Pitha made with rice flour, Date Jaggery(gur) syrup and oil. Traditionally in Bangladesh, the thorns of Date tree are used to make the intricate designs, though I am using toothpick instead of thorns. The beauty of the Pitha will make you speechless. Another plus point is its long shelf life. So you can sundry it for 2-3 day and put into airtight container till you want to fry them. Usually for wedding ceremonies and other festivals (Special Eid) the women of rural area made this pitha month ahead. So enjoy this yummy crispy Pitha(cake). For Eid Dessert Semai is so popular that in some places Eid ul Fitr is called as Semai Eid. I will give Jorda Semai recipe today and you can see that I used fresh orange to make orange flavour. And I also used bit orange colour (as you know that Jorda should be in orange colour). Don’t be shy to use ghee but if  you want, you can use half oil and half ghee.   Bukhari Rice / Bukhari Polau is easy to make, simple, and delicious. Bukhari rice is a Saudi Arabian speciality but also cooked in the UAE, and Pakistan.  It comes in many different colours (including red, white and mixed colour) and shapes; it can be cooked many different ways. I tried to give easy one considering Bangladeshi people taste buds. Usually paprika (non-spicy chilli which gives only colour) is used for this recipe. But I used our traditional chilli powder (which you can use more or less up to your taste). N.B.Though it is not a Bangladeshi recipe (breaking the trend), please don’t hate me for this.   Most of us make prawn curry mixed with rice( chingri curry makha bhat) instead of making Chingri Polau / Prawn Rice. Chingri Polau / Prawn Rice should be unique prawn flavoured rice with minimal spices. Some of us love to peas, potatoes, cauliflower even carrot. Personally I love to use fried crispy diced potatoes. Using potatoes and vegetables is optional or to your taste. I used oil here to keep prawn’s smell intact.   Ingredients: • 500 gram chicken breast • 2 white bread slices • ½ cup onion sliced • 4-5 green chillies • 2 tablespoon cream • 2 tablespoon tomato sauce • 3 tablespoon coriander leaves chopped • 1 teaspoon ginger paste • 1 teaspoon roasted cumin powder • ½ teaspoon garam masala powder • ½ teaspoon white pepper powder • 1 teaspoon salt or to taste • Oil for shallow fry       How to make: 1. Take all ingredients in food processor and blend it. 2. Take a little mince mixture in your hand; squeeze it to give the shape. It will be long cylinder shape like picture. 3. Heat the oil on medium high and shallow fry it till it becomes golden brown. 4. Take out muthi kabab from oil and serve with your favourite sauce.
