Ramadan Mubarak. To make this beautiful simple dessert please keep in mind 3 key points- batter consistency, temperature of oil and temperature of syrup. If you make sure these key points, you will get perfect Boondia / Boondi / বুন্দিয়া. Using colour is totally up to your choice, though I keep it traditional using bit of red colour. Some of us love to add baking powder, I dont find any need for that. Enjoy. With regards, Rownak Ingredients: 1 and ½ cup gram flour(Besan) 1 and ½ teaspoon oil 1 cup of water Food colour(to your choice) Oil to deep fry   For syrup 1 and half cup sugar 1 cup water 2 cardamom pods Also needs perforated ladle or flat skimmer. How to make: Boil cardamom, water and sugar in a sauce pan on medium heat till sugar dissolves. Simmer for 2-3minutes and turn off the heat and keep it aside.   Falooda/faluda is a cold and sweet beverage for summer and great for Iftar. Falooda is very refreshing. Traditionally it is made with lots ingredients; here I try to make it simple and easy for home made version to keep it original flavour. You can use or add fruit by your choice, just pick sweet one. Rose essence goes well this recipe, though you can Rooh Afza which will give flavour and colour together. If you don’t have any of these just boil milk with 1 cardamom pod.  Thanks. Chick Peas Masala / Chola Bhuna is a special way to have chick peas during Ramadan. Usually brown chick peas are used for this recipe, though you can use any kind of chick peas or peas for this preparation. It is a simple recipe, you can add or modify with your taste. I am giving the traditional recipe. Some of us loves to add tomato in this recipe which is up to you. For adding tomato, dice it and add with spices.   Ramadan Mubarrak. In Bangladesh Ramadan and iftar in Puran Dhaka  are inseparable or entangle . Puran Dhaka is famous for its traditional food and Suti Kabab / Sutli Kabab (specially in Iftar) stands there with glory. This kabab goes well with paratha and puffed rice(muri). Psyllium Seed husk Juice / Isobgoler Shorbot Psyllium seed husks are indigestible and are a source of soluble dietary fibre for relief constipation and irritable bowel syndrome. Psyllium husk can improve lipid control in Type 2 diabetes. Psyllium husks usually need to soak in water for a minimum of 30- 60 minutes before consumption. If you don’t like the sliminess, soak it just before consumption. Psyllium seed husk(isobgol) is available any supermarket health food section or organic super market.

Beguni

  Beguni is basically deep fried sliced egg plant covered with gram flour batter. Begun is very popular in Ramadan. I can remember that egg plant becomes very expensive in Bangladesh at Ramadan time. But high price of egg plant could not resist people to buy it egg plant. So you can understand how popular Beguni is. It is the most common snacks in my house. Because I have made it thousand times, I do lots of experiments with it and find simplest way to make its batter without compromising the taste. Though in our country and traditionally it is used gram flour for beguni batter, I will prefer to use plain flour. I am using carom seeds in it, please make sure you use too. Thanks.   Chingri Motor Daler Bora / Prawn Peas Fritter is a peas’ fritter stuffed with prawn. Fritter size depends on prawn size. With small you can small fritter and with large prawn you will make large fritter. Ingredients: • ¾ cup yellow split peas • 3 tablespoon plain flour • Prawn • 4-5 green chillies • 1 tablespoon chopped coriander leaves • 1 medium size onion sliced • 1 teaspoon chat masala • ½ teaspoon turmeric powder • Salt to taste • Oil for deep fry       How to make: 1. Soak yellow split peas for at least 4 hours or overnight. 2. Wash the peas and drain water. 3. Add peas, green chillies and coriander leaves in a food processor and mix well. 4. Fuluri

  Fuluri is basically deep fried cauliflower floret covered with gram flour batter. I am doing Fuluri recipe on request. I thought about this recipe in Ramadan time but as usual forgot to post. Then one of my readers asked for it. Though in our country and traditionally it is used gram flour for fuluri batter. But I tried with plain flour and found that the outcome was same. As you know that gram flour is not common or available in Bangladeshi kitchen except Ramadan time. So try once with plain flour and please don’t forget to share your experience. Noodles Pakora / Noodles Fritter

  Noodles Pakora / Noodles Fritter is very easy and handy recipe with bit of freshness. Ingredients: • 85 grams noodles • 1/3 cup flour • 1 small onion finely sliced • ½ teaspoon turmeric powder • ½ teaspoon chilli powder • 1 teaspoon ginger garlic paste • 3 green chilli chopped • 2 tablespoon coriander leaves chopped • Salt to taste • Oil for deep fry How to make: 1. Boil the noodles and strain it. 2. Mix well all ingredients with noodles. 3. Heat the oil on medium high. When oil is ready, make fritter of noodles and fry it till it is light golden or crisp in outside. 4. Serve Noodles Pakora / Noodles Fritter hot. Tips: if you want, you can use more flour.
