  Quail meat is rich in micro-nutrients and a wide range of vitamins including B complex, folate and vitamin E and K with extremely low skin fat and low cholesterol value. It is therefore highly recommended for people with high cholesterol levels and those who want to maintain a low level of cholesterol. I love to cook Quail with little amount of oil and spices and keep simple. Please don’t make it heavy which will hide its taste. Thanks. Khasir Dalcha / Mutton Dalcha is a delicious mutton curry with split yellow peas and long melon/ bottle gourd(lau). This curry dish literally goes with everything(along with luchi, paratha, roti or side with biriyani or main with plain rice or polau). Use of tamarind puree has interest roll here. Using certain amount of tamarind will  enhance the taste without making any tangy flavour to the curry. Enjoy.   Hi! I haven’t posted exotic recipe for long. Eid ul Adha is coming soon so this is best time to learn meat recipes. As you know that Eid ul Adha is Eid of meat. Nargisi Kofta Curry is a Moughlai dish. I tried to keep its exoticness. You can just make Nargisi Kofta and enjoy it, or put it in gravy to make curry. In both form it tastes great. If you want, you can make gravy with coconut milk. Traditionally in Bangladesh nargisi kofta’s gravy is made by coconut milk. In that case instead of yogurt use coconut milk and use oil. There are several types of Kichuri such as vegetable khichuri, bhuna khichuri, masala khichuri, mutton khichuri/ beef khichuri. Personlly I like vegetable khichuri a lot with fried egg.   Sorry being lazy to post. Before I was lazy to cook, nowadays I am lazy to write. Sometimes in my house we get bore with conventional meat (beef, mutton, chicken) and that time I try to cook duck, quail, brain, stomach, liver etc which make our food habit interesting. Ingredients: • 3 quails (cut into half) • ¾ cup milk • ¾ cup plain flour • 2 teaspoon lemon juice • 1 teaspoon ginger paste • 1 teaspoon garlic paste • 1 teaspoon onion paste • 1 teaspoon chilli powder • ½ teaspoon crushed black pepper • ½ teaspoon tasting salt(optional) • Salt to taste • Oil for deep fry How to make: 1. Cut the quails into half and wash well. Pat dry quail pieces. 2. Add all ingredients except flour into quail pieces and mix well. Let it marinate at least 2hours in refrigerator. 3.   Long ago I posted Achari chicken and got great response from you guys. In the recipe of achari chicken I made from scratch. But in achari mutton I try to make it simple and handy to use Mango pickle/ amer achar(Amer Achar is a must have thing in bengali kitchen). Hope you will like achari mutton too. And I will give Achri Mutton from scratch in near future. In the same way you can cook beef too. Just use less ginger and garlic. Ingredients: • 1kg mutton(curry cut) • 1 large onion sliced • ½ teaspoon turmeric powder • 1 teaspoon chilli powder • 1 tablespoon ginger paste • 1 tablespoon garlic paste • 1 tablespoon English mustard paste • 6-7 cloves of garlic • 5-6 dry chilli • 1 bay leaf • ½ cup of mango pickle/ amer achar(with oil) • 3 tablespoon oil • Salt to taste How to make: 1. Chilli Beef By Rownak Jahan, June 19, 2012 Prep Time: 6 minutes Cook time: 28 minutes Yield: 4 Ingredients: • 500 gram beef stir fry • 1 tablespoon vinegar • 1 tablespoon soya sauce • 1 teaspoon ginger paste • ½ teaspoon white pepper powder • ½ teaspoon sugar • 1 tablespoon cornflour • 1 medium size onion • 10-12 green chillies(sliced) • ½ teaspoon tasting salt • 3 tablespoon oil(I prefer mustard oil) • Salt to taste       How to make: 1. Marinate meat with soya sauce, vinegar, ginger, sugar, pepper and salt. Let it sit for at least half hour. 2. Cut the onion and open it up like the picture. 3. Heat the pan with oil and add meat. 4. When it dries up; add 2 cups water and cook it under closed lid till meat becomes tender. 5. Add green chillies, onion and tasting salt and stir it. 6.
