Mutton Leg Roast / Masala Raan / Khasir Leg Roast

  You can cook it in oven, but to make it more convenient I did on pan. It is a beautiful dish with full of flavour. Only trick in this recipe is marinating part. Most(only)  used meat tenderizer is green papaya paste which is used in this recipe. You can use any meat tenderizer by your choice. If you want to use oven to cook this recipe, after frying the leg add rest of ingredients and cook 5 minutes, pre heat oven on 180̊ C, place  the leg with gravy into a baking tray and bake 60-90 minutes or till meat becomes tender. You can use lamb leg instead of mutton. Shami kabab  is The most popular kabab in Bangladesh. It is made with a small patty of minced or ground meat, (usually beef but occasionally lamb or mutton), ground chickpeas, spices and egg to hold it together. I tried to make the as easy possible and please check tips part if you are making first time. Best part of this kabab is its freezable, you can make this kabab, freeze it and fry it whenever you like. Enjoy. Sorishar tel-e khasir kalia / Mutton curry with mustard oil is my Goalondo Chicken curry inspired Mutton curry. I have nt used any Garam masala here to keep flavour of mustard oil. Mustard oil was used to use vastly as cooking oil about 30 year. Nowadays it is not that popular for its higher price till there are same dishes where mustard oil is a essential ingredient. Enjoy. Ingredients: 1 kg mutton 2 cups onion chopped 1 tablespoon garlic chopped 1 and ½ tablespoons ginger paste ½ tablespoon chilli powder 8-10 green chillies sliced 1 teaspoon turmeric powder 1/3 cup mustard oil 1 bay leaf Salt to taste How to make: Clean and wash mutton and place in a strain to get rid of water.   Khasir Glassy / Mutton Glassy is traditional Old Dhaka (Puran Dhakaiya) Meat curry. Khasir Glassy / Mutton Glassy is supposed to have thick oil layer which looks like glass ( Very rich dish) but easy to make. Its actually more like rich soup and close Nihari. Enjoy. Khasir Dalcha / Mutton Dalcha is a delicious mutton curry with split yellow peas and long melon/ bottle gourd(lau). This curry dish literally goes with everything(along with luchi, paratha, roti or side with biriyani or main with plain rice or polau). Use of tamarind puree has interest roll here.   Long ago I posted Achari chicken and got great response from you guys. In the recipe of achari chicken I made from scratch. But in achari mutton I try to make it simple and handy to use Mango pickle/ amer achar(Amer Achar is a must have thing in bengali kitchen). Hope you will like achari mutton too. And I will give Achri Mutton from scratch in near future. In the same way you can cook beef too. Just use less ginger and garlic. But we only cook pakki biryani. In pakki Biryani meat and rice are cooked separately then mix together and in kachchi biryani   meat and rice are cooked together. As you know that kachchi biryani has more flavour (to me 10 times) than pakki biryani. When I cooked my first kachchi biryani, I was sure that mutton would not cooked. But in reality mutton was cooked like cotton ball(Just loved it).  So please please try kachchi biryani next time and share your opinion.
