Syrupy and crispy fried Rice cake/ Nokshi Pitha made with rice flour, Date Jaggery(gur) syrup and oil. Traditionally in Bangladesh, the thorns of Date tree are used to make the intricate designs, though I am using toothpick instead of thorns. The beauty of the Pitha will make you speechless. Another plus point is its long shelf life. So you can sundry it for 2-3 day and put into airtight container till you want to fry them. Usually for wedding ceremonies and other festivals (Special Eid) the women of rural area made this pitha month ahead. So enjoy this yummy crispy Pitha(cake).
