Have you planned anything for Eid desserts yet? If you want to go with Bangladeshi Tradition, you can try Nokshi Pitha / Crispy Rice Cake. Syrupy and crispy fried Rice cake/ Nokshi Pitha made with rice flour, Date Jaggery(gur) syrup and oil. Traditionally in Bangladesh, the thorns of Date tree are used to make the intricate designs, though I am using toothpick instead of thorns. The beauty of the Pitha will make you speechless. Another plus point is its long shelf life. So you can sundry it for 2-3 day and put into airtight container till you want to fry them. Usually for wedding ceremonies and other festivals (Special Eid) the women of rural area made this pitha month ahead. So enjoy this yummy crispy Pitha(cake).   How amazing it is when you find similarity between food of different countries!! Our very own Fuljhuri pitha and Rosette cookie are identical. For this recipe you need iron of fuljhuri pitha (ছাঁচ) and if you live in abroad, you can easily buy Rosette and timbale set which is similar to fuljhuri pitha (ছাঁচ). Enjoy. Kholajali Pitha is origin to Noakhali district of Bangladesh. It is literally rice flour crepe (Gluten free) which is traditional cooked on clay pan and with duck egg. But non-stick thick bottom pan and chicken egg will work well. If you are using store bought rice flour, please make the batter and let it sits for 1-2 hours before you make the pitha. Alur Jilapi Pitha / Potato Pretzel is deep-frying   potato, flour and milk  pretzel shapes, which are then soaked in sugar syrup for 4-5 hours. It tastes close to Golap jam(lal mohon). Potato is a unusual ingredient for sweet. Trust me you wil love the result.  You can give guessing game for your family (what is the ingredient). Enjoy. Ingredients: For Dough: 1 cup boiled potato ½ cup milk powder ½ cup flour 1 tablespoon semolina 2 tablespoons ghee 1 teaspoon milk ½ teaspoon cardamom powder 1/8 teaspoon baking powder Oil for deep fry For Syrup: 3 cups sugar 2 cups water     How to make: Boil sugar and water together and make the syrup. Sim ful Pitha/ Dimer Pitha / Egg Snack

  The name or shape of pitha can vary district to district. Sim Ful Pitha is actually from Noakhali which has beautiful shape bean flower though you can make it in any shape. I  used to make thick bread and cut into square; then deep fry it which is called Dimer pitha. Ingredients: 1 ½  cup flour 1 egg ½ cup sugar ¼ tsp salt Oil for deep fry             How to make: Beat egg, sugar and salt together till sugar and salt dissolves. Add flour little at a time to make dough (flour could less or more to depend on egg size). Divide the dough into 4-5 balls and roll each ball into flat bread. Cut each bread with cookie cutter and fold it to follow photo or video. Heat the oil and fry it on low heat till it becomes light golden.   Anaros Pitha / Pineapple Snack is a pineapple shape snack soaked in syrup. Ingredients: For Dough: 2 cups plain flour 2 tablespoons oil Water Salt Oil for deep fry For Syrup: 1 cup sugar ½ cup water           How to make: Make syrup and let it cools down. We need lukewarm syrup. Make semi hard dough with all ingredients and rest for at least 15 minutes. Divide dough into 6 balls and roll each ball into thin flat bread. Cut each bread into quarter inch strip and take 10 strips to weave a mat; join each edge to give pineapple shape like video or photos. Heat oil on medium heat and fry each pineapple snacks till it becomes golden brown. Take it out from oil and soak it in syrup for minute. Kolar Pitha / Banana Fritter is a very simple snack. Chinichompa kola(a type of small banana with unique fragrant and taste ) is usually used in the recipe.There is no use of water in this recipe. Taler pitha /Palm fritter is made with same way. Ingredients: • ¾ cup rice flour • 2 tablespoon plain flour • 3 bananas(lady finger / chinichampa kola) • ½ cup jaggery/ palm sugar(grated)(to taste) • 1/6 tsp black cumin(kalijeera) • ¼ tsp salt • Oil for deep fry         How to make: 1. Mashed banana, jaggery and salt together; make a smooth batter. 2. Add rice flour and flour and make a nice smooth thick batter. Add black cumin. 3. Heat the oil in the frying pan. Eidul Adha Mubarrak. Chaler Ruti /Ruti Pitha / Rice Roti / Gluten Free Flat Bread is a popular item in second day of Eid with meat curry in Bangladesh. It takes only 2 ingredients, but needs bit effort on kneading. Thanks. Ingredients: • 1 cup rice flour • 1 tsp salt • Rice flour for rolling How to make: 1. Boil 1 cup water with salt, when it comes to boiling point, lower the heat to minimum. 2. Add flour to the water and stir well. Cook it 1-2 minutes and turn off the heat. 3.
